Energy Bars

Prep Notes

You can be creative on what you add to these energy bars. The list of ingredients are just ideas of things you can use but you don't need all of the ingredients to make this recipe. You should be good as long as you have the base down. Feel free to adjust the quantity of the ingredients as you see fit except for the base.

12 energy bars

Ingredients

  • 1/2 cup of almond butter
  • 1/2 cup of honey
  • 1/2 tsp vanilla extract
  • 1 pinch of salt
  • 1/4 cup of almonds cut in chunks
  • 1/4 cup of pepitas
  • 1/8 cup of amaranth seeds
  • 1/8 cup of pine nuts
  • 1/8 cup of shredded coconut
  • 1/8 cup of cacao nibs
  • 1/4 cup of pecans

Directions

For the base, combine the almond butter and the honey in a pan and heat it up at low heat until they are melted. Add the vanilla and the salt and mix. Turn off the heat and add the rest of the ingredients and mix well until you see everything evenly combined.

Prepare a 6x6 baking pan or glass pyrex with parchment paper. This will help the ingredients you are about to pour to not stick to the pan. Pour the ingredients into the baking pan and with a spatula, spread evenly. Try not to leave pockets of air. Press firmly. Imagine you will be cutting it out to make the energy bars once it has cooled in the refrigerator for a couple of hours. 

Keep it in the refrigerator until they are ready to eat. Enjoy!
