Breakfast Power Bowl

Prep Notes

This is a gluten free healthy option for breakfast. The base can be prepared in advanced in individual containers or in a big container for people to share. This bowl will keep you satisfied and energized. Use any topics you want. Check out the granola recipe also in the breakfast section.

2 individual bowls

Ingredients

  • 2/3 cup cooked quinoa
  • 3 Tbsp chia seeds
  • 1 cup unsweetened almond or coconut milk
  • 1/2 tsp vanilla
  • 1/2 cup rinsed blueberries
  • 1 banana sliced
  • 3 Tbsp silvered almonds
  • 2 Tbsp melted almond butter
  • 1 Tbsp raw honey
  • 2 Tbsp dark chocolate chips or cocoa nibs
  • Other optional toppings (strawberries, raspberries, blackberries, kiwi, peaches, coconut shavings, granola)

Directions

  1. Stir together the cooked quinoa, chia seeds, almond milk, and vanilla in a medium sized serving bowl until combined.
  2. Pour mixture into one of two serving dishes. Cover with plastic wrap and refrigerate overnight (or at least 4 hours).
  3. When ready to eat, rinse and slice fresh fruit.
  4. Combine almond butter and honey in a saucepan and heat until warm. 
  5. Top quinoa pudding with fruit, almonds, and any toppings you selected and drizzle of the almond butter/honey mixture. 
  6. Serve and enjoy immediately.
